Dried tomatoes and eggplant soft-thinned

Dried tomatoes and aubergines should first be softened before being added to the dish.

Dried tomatoes are available in the supermarket in oil to buy, then you can remove them, dab and use as they are.

In Turkish shops you can buy tomatoes and eggplant, often also paprika, simply dried packed in bags.


Before you add it to the food that you want to prepare, you should first soften it. The amount you want to use is covered with water, add 1 tsp salt and 1 tbsp balsamic vinegar.

After about 20 minutes on very low heat, the vegetables are soft and can now be processed in sauces, soups or as a filling for omelets. Or whatever you want to cook for a dish, with tomato or eggplant and peppers.

Even if you want to put the tomatoes spicy in oil, you should first steam them soft and not immediately put into the spiced oil. Otherwise they will not soften, but taste as tough as a piece of old gum.
