Egg casserole with sweet potatoes - a great vegetarian dish

Sweet potatoes once in a different way: as a delicious egg casserole with Parmesan and sage. Yesterday I once cooked a great vegetarian dish to make a girlfriend happy with family. I love fast-to-prepare and tasty dishes, and that's one again! The family also gave positive feedback.

Ingredients (for 6 people)

  • 1200 g sweet potatoes
  • 75 g of grated Parmesan (preferably fresh)
  • 9 eggs
  • 375 g of cream
  • Fresh sage leaves
  • garlic powder
  • salt and pepper
  • olive oil
  • Possibly. a pinch of nutmeg, to taste
  • Cayenne pepper to taste

preparation

  1. First preheat the oven to 200 degrees.
  2. Peel the sweet potatoes and cut into smaller cubes.
  3. Prepare a casserole dish or a deeper tin, add the sweet potato cubes and drizzle with a little olive oil, salt and mix everything. Preheat the whole for 30 minutes in the oven.
  4. In the meantime you can prepare the egg cream: mix the eggs, the parmesan, pepper, nutmeg and garlic powder well together. You can also optionally, to taste, add some cayenne pepper, the taste is very good and gives the whole thing!
  5. Once the potatoes have been cooked, they are removed from the oven, the temperature is reduced to about 150 degrees, the egg cream is poured over the sweet potatoes and the sage leaves are spread over them.
  6. The whole comes then for another 30 minutes in the oven until the eggs are fixed. The casserole is very nice and looks very appetizing.

Tips

  • It goes well with spinach, a fresh salad, garlic or herb baguette, fried onion rings ...
  • In this egg casserole, you can also use great leftovers: Feta / sheep cheese, tomatoes, leftovers from other cheeses, onions, etc. as you can let the imagination run wild.
  • To decorate are very good chives or chopped parsley.
  • In retrospect, my friend told me that the sage was very tasty in the dish, but you could also mix it into the dish, so it is more intense than taste in the court to advantage, as if it is only on the surface.
  • To taste, if you do not like to eat sweet potatoes, you can also use less or the dish with? Normal? Preparing potatoes.
  • As mentioned above, cayenne pepper would also go very well with it, so if you like to eat harder, you can do it.
