Elderberry syrup from berries

Now the elder is ripe again and I cook like every year syrup and jam from the juice.

For the syrup I juiced elderberries, preferably in the garden, is a murder sweeping - stains are permanent. I use a juicer, the berries are first striped with a fork of the umbels and rinsed off briefly, we do not want juiced earcups ...


Then they are boiled with sugar to a thick syrup, mixing ratio about 1: 1.

The syrup comes in glass bottles, best suited to fill new water bottles, open pour. They are germ-free inside and the pledge returns later. I fill my wine in such bottles, so far never had any mold problems with it.

In winter, I drink the syrup diluted with water as a tea that tastes good, and prevents colds. If it has caught me, there are 3x daily. 1 tablespoon of the syrup mixed with a tablespoon of warm water.

The jam I cook from the elderberry juice, which is cooked with 2: 1 gelling sugar according to instructions, it tastes a little earthy-sweet but I and my family delicious.
