Cut off elderflowers when the weather is dry and wash over a colander. Then the breading must be made: Based on 10 flower umbels you need 2 eggs and 500g wheat flour. Whisk eggs and wheat flour. Heat Palmin. Dip the washed elderflower into the prepared breadcrumbs, then add to the hot oil and fry for 2-3 minutes. Then scoop out, put on big plates and sprinkle with sugar.
