Emmental cheese cookies

Ingredients for the dough:

125 g of flour
1 pinch of salt
50 g of grated Emmentaler
50 g of margarine or butter
1 egg yolk
1 - 2 tablespoons of cream or milk
Pepper, nutmeg and sweet peppers for seasoning

Ingredients for sprinkling:


1 egg yolk
1 tablespoon of cream or milk
Grains and seeds to sprinkle such. Poppy seeds, sunflower seeds and sesame seeds

Preparation:

All ingredients are kneaded to a smooth dough. You can spice it up at will. The dough is then shaped into a roll (about 5 cm in diameter) from which slices (1-2 mm thick) are cut in succession. The finished slices then come on a baking sheet and are coated with the cream yolk mass. Finally, before the slices are baked golden yellow at 175-200 ° C for 7-10 minutes in the oven, the kernels and kernels come as an ornament on it (the grains and kernels bake in the oven on the slices or cookies).

If you like, you can also roll out the dough and cut out the cheese biscuits with cookie cutters. So they get a very nice shape.

Instead of the Emmentaler, another spicy grated cheese can be used. But then you do not bake any Emmentaler cheese cookies anymore!
