English Bitter Orange Marmalade

English orange marmalade Pomeranians: bitter oranges, can only be ordered from mid-January to the end of February from the tropical fruit trader - or even better from the South ?.

ingredients

  • 1 kg of bitter oranges (bitter oranges)
  • Gelierzucker
  • 1 gauze bag

preparation

  1. Hot-hot, squeeze out the juice, keep the juice in the refrigerator.
  2. Put the seeds in the gauze bag. Cut the shells into fine strips, add 1 and 1/4 l of water and leave for 24 hours.
  3. Cook on the following day until the graters become glassy (about 45 minutes), then let them rest for 24 hours.
  4. On the third day add the juice, remove the gauze bag with the seeds.
  5. Prepare the mixture with the gelling sugar as specified and fill into jam jars. The effort is great, especially the cutting in fine strips by hand, but looks better than out of the machine.

The photo shows unfortunately no bitter oranges, they are not so nice in appearance (a bit spotty and I will soon bring me from Cyprus and then just get started.) The glass is still from last March?
