Fillet Makkarone fresh with green asparagus

The other day there was a Macaroni purée with pork tenderloin and green asparagus, which I had already prepared the day before due to time constraints.

I really like this better with casseroles, because the casserole prepared this way is stronger and better to cut than a fresh casserole directly from the oven.

ingredients

  • 1 kg of pork fillet tips
  • 250 g of macaroni
  • 500 g green asparagus
  • broccoli and cauliflower as desired
  • 1 pack of grated cheese
  • grated or grated Parmesan
  • 1 package of cream cheese to taste (chili, herbs, peppers, garlic, horseradish or nature)
  • pepper and salt
  • nutmeg
  • 2 eggs
  • 1 packet / cup of cream or equivalent amount of milk
  • some hot pasta noodles
  • bread crumbs

preparation

  1. Cook noodles according to the package instructions al dente, keep a large cup of cooking water.
  2. If you still have fresh vegetables, broccoli and cauliflower florets or peas can also be blanched for a short time. (For such purposes it is useful to keep some blanched vegetables individually packed in the freezer.)
  3. Peel the green asparagus, if necessary, only in the lower third and cut off the wooden piece, fry in a pan with rapeseed oil or clarified butter for 4 minutes, reduce heat and cook for about 5 minutes.
  4. Season with salt and pepper, possibly add a dash of lemon butter and remove from the pan.
  5. Wash and dry the fillet. Cut with a sharp knife so that you can open it (Caution: do not cut through).
  6. Press gently, season with salt and pepper and fry for 1-2 minutes from each side, remove from pan and set aside.
  7. In the same pan, the cream cheese is stirred, whipped with cream and / or milk, a little pasta boiling water and eggs and seasoned with nutmeg. Pour over the boiled noodle and mix well.
  8. In a greased casserole dish, a layer of macaroni-sauce mixture is distributed.
  9. Then comes the unfolded fillet covered with green asparagus.
  10. Spread broccoli and cauliflower right and left and cover with another layer of noodles.
  11. Grated cheese is made with breadcrumbs or homemade crumbs from z. B. chips mixed and added to the noodle casserole.
  12. Cover with baking paper (or give the cheese later).
  13. Bake for about 30 minutes at 180 degrees hot air, then remove the baking paper and tan a few minutes (depending on the oven).
