Fillet of pork stuffed with feta with sage butter and crunchy vegetables

Pork tenderloin is quick to prepare and becomes a taste sensation with tasty trappings.
Inspired by my favorite English chef, I recently tried the following recipe:
ingredients
- 1 kg pork tenderloin
- 1 fennel tuber
- 1 packet of feta cheese
- 1 package of bacon / breakfast bacon (here in the absence of bacon: Black Forest ham, which was a bit too flavorful)
- 2-3 zucchini
- 1-2 bars of spring onions
- 1 chili pepper
- tomato paste
- red wine vinegar
- some cherry tomatoes
- some branches of sage - fresh
- butter
- cooking fat
- salt
- Italian spice mix
- Rice as a side dish
preparation
- Cut the fillet into 5 cm thick slices and gently press gently with your hand.
- Slice feta cheese. Use your fingers to press a small bowl into the fillet and fill with the cheese.
- Wrap a slice of ham around the piece of filet and sauté briefly with the seam side in frying fat from all sides. Remove from the pan and set aside.
- Cook rice according to specification. Here: in the microwave (cooking time 12 minutes).
- Roast tomato paste in the frying fat, deglaze with red wine vinegar.
- Add the finely chopped vegetables, sauté and season with Italian spice mixture (also pizza spice or tomato mozzarella spice).
- In a separate pan, leave out butter. Brown fresh sage leaves in a short tan and place them on the prepared plate over the fillet.
