Spring time = wild garlic time. Here is a light and fast wild garlic soup.

- Puree a handful of wild garlic in a blender with a little olive oil.
- In a saucepan, chop the very small onion into a saucepan, dust with flour, mix well and then add 1 liter vegetable stock. Mix well.
- Now add the pureed wild garlic to it, whisk it open with a whisk, add it to a plate, add a whipped cream on top and a very fine spring soup is ready!
Incidentally, this soup also tastes very good as a cold refreshing soup on hot days!
