Fresh-fruity salad plate with mozzarella balls

Fruity fresh salad plate with mozzarella balls, apricots, zucchini and Romana salad hearts. Simply delicious!

Cooking is not fun at the current temperatures, so there is often a fresh salad that is quick and easy to prepare, and the ingredients can be varied according to taste.


ingredients

(For 3-4 servings)

  • 1 onion
  • 3 small zucchini
  • 2 Romana lettuce hearts
  • 1 cucumber
  • 6 apricots
  • 125g mozzarella mini balls
  • a little salt and pepper
  • Chilli powder (at will)
  • 2 tbsp olive oil
  • 1 tsp Balsamico di modena (an Italian balsamic cream with a light raspberry flavor)
  • 1 tsp mustard (medium hot)
  • 1 tablespoon tomato paste
  • a little rapeseed oil for frying

preparation

  1. First the onion is peeled and finely diced.
  2. The zucchini are washed, cut into thin slices and then cut in half.
  3. The rapeseed oil is heated on a large pan, and the zucchini slices and onion cubes are sautéed at a moderate temperature.
  4. The lettuce hearts are washed, cut into bite-sized pieces, mixed under the zucchini slices and lightly steamed with. Then pour the mixture into a large bowl.
  5. Now the cucumber is washed and cut into thin slices and mixed in.
  6. The apricots are washed, halved, pitted and each half cut into 4 narrow slits.
  7. Cucumber slices and apricot slices are then mixed with the remaining salad ingredients in the bowl and the whole is seasoned with a little salt and pepper. Then add the mozzarella balls.
  8. In a small bowl, mix 2 tbsp olive oil with 1 tsp balsamic cream, 1 tsp mustard and 1 tbsp tomato paste to a vinaigrette, season to taste with salt, pepper and some chilli powder and then sprinkle over the salad.

This fits best a fresh baguette or wholemeal bread.
