Fresh grain porridge: sweet dessert from oat grains

Muesli from oatmeal certainly knows everyone. Here's an idea how to make fresh grain porridge from whole oat grains and a few other ingredients.

Ingredients per person

  • 3 tablespoons (about 50 g) oat grains
  • water
  • 1 handful of fruits z. B. raspberries
  • if necessary sugar to taste

preparation

  1. Oat grains (about 50 g) with plenty of water soak overnight.
  2. Drain off the soaking water and rinse the oat grains in a sieve. The oat grains swell so far that they almost double their weight (about 90 g).
  3. Pour the swollen oat grains into a tall container and fill with enough fresh water to cover them.
  4. Purée with the blender until the desired consistency, if necessary add water (juice or milk).

The consistency depends on how long you purée and on how much liquid you add. If you want more of a solid mass, where you have something to chew, similar to muesli (less water, puree shortly), or you want more of a creamy cream (more water, puree longer). Since you can even respond to the wishes of the individual family members.


  • Add flavoring ingredients (eg raspberries)
  • Add spices (a dash of lemon juice, sugar)
  • continue to purée or just mix

Flavoring ingredients can be a handful of (frozen) raspberries or other fresh or frozen fruits, but also something like cocoa powder, grated coconut, nuts, jam and the spices like cinnamon, vanilla, anise. Lemon gives a slightly sourish taste, as can be found with yoghurt or quark. Which is why this oat cream is just as well suited as a vegan basis for Zaziki. Further processing such as humus, with sesame and olive oil is conceivable.

Fresh or cold soaked oat grains taste slightly nutty, have a slightly different flavor than oatmeal. If you want to intensify this nutty taste, you can roast the oat grains briefly before soaking in a frying pan without fat. This harmonises well with the variant with cocoa.

Long soaking requires some thinking ahead and planning. Only when I plan the oat cream, I oat the oats at room temperature for a maximum of 24 hours. For spontaneous oat cravings is a jam jar with soaked oatmeal in the fridge. It does not matter then on one or two days longer soaking time.

The oat cream made from 50 g of oatmeal and water gives so much that you can also loosely divide the amount into smaller portions and with various other ingredients a. a chocolate-vanilla-raspberry dessert composition can put together. A smaller amount is suitable as a spread.

It is also easy to prepare this recipe with oatmeal, which is easier to obtain, quicker to process and naturally also very healthy. In the production of oatmeal oat grains are flattened flat. Once the grain is broken, it loses its natural protective cover and the rich oat grain fat can turn rancid. To prevent this from happening, the oats are treated with heat in industrial oatmeal production, which causes some vitamins to be lost. When using whole oat grains, everything is still in the grain in it. Oatmeal is healthy and oatmeal is even healthier.
