Fresh yummy cucumber tomato salad with parsley

This really very easy to prepare fresh salad of tomatoes and cucumbers with (much) parsley goes well with almost all dishes, especially with grilled meat. I just like to eat it like that! I have made similar preparations during a holiday in Greece.
It tastes best in summer when you have sun-ripened tomatoes.
If you like, you can add sheep or goat cheese to the salad at the end.
Ingredients for 1-2 persons
- 1/2 snake cucumber, cut into coarser pieces
- 1 handful of cocktail tomatoes or tomatoes of your choice, as well as the amount, cut into coarser pieces, like the cucumbers. About optically as much as the cucumbers.
- Lemon juice to taste, I had about half of a lemon, it likes to be more acidic.
- about 1/4 - 1/2 on slightly coarser slices / strips cut onion. Quantity also to taste.
- 1 handful of chopped fresh parsley
- Olive oil, quantity at will, I use very little.
- Salt and pepper from the mill
preparation
- Wash the cucumber, peel it if necessary and cut into coarser pieces.
- Likewise, wash the tomatoes and cut in cocktail tomatoes, just halve, cut coarser pieces for larger tomatoes.
- The onion in fine! Cut stripes. Put all the ingredients in a bowl or on a plate.
- Sprinkle the salad with olive oil, sprinkle with the lemon juice, a pinch of sugar or some agave syrup (I like to take that) and season with salt and pepper and add the sliced parsley. (Amount to taste, but do not save.)
- Mix the salad and let it pass for a few minutes.
Important for the taste: Tomatoes and cucumbers should not be freezing cold for the taste!
