Fried eggs without burning

So I always hated the solid crust under the fried eggs. Incidentally, the eggs are still so soft above that the protein is still half transparent (uuuh!). This only happens if you do not have time to roast fried eggs.

With small tricks you can effectively prevent it.

  1. Oil instead of butter: away with the butter for frying, prefer to take oil and then not stingy it, it may already be something more.
  2. Do not let the hotplate get hot, just switch it on under medium heat; It is essential to let the hobs, which were previously used for other dishes, cool down.
  3. Beat the eggs in the pan as usual (by the way, this can be done while heating, you do not have to wait until the plate is hot).
  4. If the egg just has a coherent consistency, you can in coated pans by gently swirling vigorously and in case of need with the cautious help of the inverter loose the egg from the bottom of the pan. From then on, nothing more can happen. With a bit of skill, the yolk remains intact. Roast to taste or, for "sunny side up", simply turn over.
  • The egg looks much better and tastes better.
