Fried fish with rice on an irresistible, spicy garlic sauce

If you have 2-3 days no appointments or must not leave the house for other reasons, you should relocate the preparation of the recipe at this time, because the spicy garlic sauce has it powerful in itself. I have conjured up a Sößchen here, which could be slurp even without side dishes as a soup, if one lives alone on an island :)

The preparation of breaded fried fish and rice is self-explanatory. The sauce provides the big show here, and that's how it's prepared:

Ingredients for 2 servings (but make them for 6 people and freeze them!)

  • 2 tablespoons of vinegar
  • 2 tablespoons honey
  • 4 tablespoons soy sauce
  • 1/4 L vegetable stock
  • 2 chili peppers
  • 2 tbsp brown sugar
  • 2 tablespoons fish sauce
  • 2 tablespoons oyster sauce
  • 8-12 cloves of garlic
  • 4 tbsp mild chili sauce sweet and sour
  • 1 teaspoon plum jam (optional)
  • coconut oil
  • 1 tablespoon cornstarch and a little water to stir
  • 1 trick of butter (cold)

preparation

  1. Peel and chop garlic.
  2. Cut chili peppers into rings, possibly scrape out the majority of the kernels for less sharpness (Add a little laugh: "Cut chilli today, then wiped your eyes with your hand.) If you can still get rid of the high school diploma afterwards";).
  3. Heat the coconut oil in the pan and fry the garlic and chili rings in it.
  4. The remaining ingredients are whisked together and boiled, except for the cornflour.
  5. Stir cornstarch with 2 tablespoons of water, add to the sauce and let it simmer while stirring constantly.
  6. Finally, add a dash of cold butter to the sauce.

This dark and very garlic-heavy medium sauce fits not only to fish, but also to beef dishes or offal (liver, heart, etc.)

With exact lists of ingredients, I usually do hard, because I taste again and again, just as long, until it fits. Everyone should follow this sauce, one more of this, the other of them more. Add more vinegar to add more acidity and sweeten the sauce with plum jam or honey.

Important:

Soy, fish and oyster sauces are very salty. This must be taken into account, and sometimes it takes a bit more broth, honey or sugar. If it tastes too salty, helps tomato paste! Tomato paste neutralizes, softens (even with other foods) to strong salty taste and goes well with the sauce.

With rice and fried fish (breaded frozen goods) a wonderful dish from which one does not get enough!
