Fried potatoes with brawn and salad

I know this recipe from my childhood. But I did not prepare it for a long time because my husband once told me that he does not like brawn. But now I have done it again to bring my husband on the taste.
The recipe is for 4 people.
ingredients
For the fried potatoes:
- 1 kg of potatoes
- bacon
- 1-2 onions
- salt and pepper
For the salad: (I made tomato salad, you can do another)
- 4-5 medium tomatoes
- 1 small onion
- different herbs
- something balsamic vinegar
Furthermore:
- Sugar (about 1 tsp)
- 1-2 glasses of jelly
- Maoynnaise or remoulade
preparation
- Peel, wash and slice the potatoes.
- Dice the bacon, cut the onions into fine cubes.
- Drain the bacon in a pan, add half of the potatoes, add half of the onions, season with salt and pepper.
- Then add the second half of the potatoes and onions and season again with salt and pepper.
- The whole then crispy with repeated turning crispy.
- For the tomato salad, dice the tomatoes.
- Chop the onions and add to the tomatoes.
- Finely chop herbs.
- Add the balsamic vinegar, the sugar and the herbs to the tomatoes and stir.
- Using a knife, remove the brawn from the glass and place on a plate, divide into 2 or 4 pieces.
- Then arrange everything on a plate and garnish the brawn with mayo or remoulade.
