Fried potatoes with fried spaetzle - a poem

Many years ago, the most delicious fried potato recipe was chosen on a television program. My family has since this favorite:

You need:

2 kg of potatoes
300 g of flour,
2 eggs,
a little mineral water - this makes it easy
1 tsp salt, for the spaetzle
150 g lean bacon cubes - or not,
Salt pepper,
paprika


2 onions
Oil for frying
1 high pot for spaetzle preparation,
1 big sieve,
1 ladle,
1 bowl,
1 knife with a wide blade,
1 board

1 coated frying pan

a baking tray to keep warm in the stove


First we cook the potatoes and put them aside to cool down. If you can touch them, peel and slice them. In a bowl, plate on it, let stand for now.

For the spaetzle, stir with whisk or hand mixer 300 g of flour, 2 eggs and a little mineral water and salt to a dough. Let stand for 15 minutes. In the meantime, boil salt water in a large saucepan and switch it down, the water just simmers.

Now you spread about half a centimeter thick dough on the lower end of the board, holding it at an angle and "scrapes" small dough worms with the wide knife in the boiling water.


It does not take long before the spaetzle is done and comes to the surface. You get them out with a ladle with holes, put them to drain on a sieve, which is on a bowl (otherwise there is piglet farming).

Never too much at once, so that the spaetzle does not stick. From time to time empty the strainer on a large plate.

Work until the dough is used up. The finished spaetzle can be covered quietly with a cloth covered for a few hours, then it will be nice and dry.

So, now we have the spaetzle and the potatoes. Our pan is heated, and each a handful of potatoes and a spaetzle are fried and seasoned with bacon and pieces of onion together. You are correct when you do not recognize, what is potato, what is spaetzle. So nice golden brown.

The finished portion comes on the baking sheet in the hot stove. You continue until everything is processed.

All you need is a gherkin and a few tomato quarters.
