Frittaten (soup insert)

I do not know if you know any fries? This is a very popular in Austria soup insert. Google has revealed that these are called Flädle in Swabia? Maybe you would like to try this once?

I try, especially for young moms, to describe everything exactly. Because the dimensions - a creator (ladle?) ... in a pan? - is relative.


My creator includes 100 ml, which should be about 2 cm from the upper edge, filled with the dough (ie about 80 ml).

My frying pan has a diameter of 24 cm. I ask to take a coated pan! This results in 10 measurements with these dimensions and the following ingredients.

  • 2 whole eggs
  • 250 g smooth! Flour
  • 0,5 l of milk
  • a bit of salt
  • 1 tsp oil

preparation

  1. Mix all ingredients well with a hand mixer or Schneerute.
  2. Only for the first frittate a teaspoon of oil can be hot! All others work without oil! I'm on level 6 of my electric range.
  3. Pour the described dough into the middle of the pan and let it flow by circling the pan to the edge. After approx. 50 seconds carefully loosen the already stacked "flat" from the edge and turn with a spatula and cook for a further 50 seconds.
  4. Slide the finished frittata on a plate and continue until the dough is used up.
  5. Now roll in the patties and cut into pieces about 1 cm wide with a sharp knife.

Now the fries are ready as a deposit for the soup.

BUT you realize that these may be too much - not all cut into rolls, but fill with jam or curd cream - that makes an excellent dessert!
