Fruity orange pudding from the pressure cooker

A very fruity tasting dairy-free pudding with a total sugar content of about 10 percent.

ingredients

  • 400 ml of orange juice or juice, pulp, grated peel of 4 large oranges. (If you do not have enough orange juice, you can also replenish with plant drink (soy milk, almond milk, coconut milk to 400 ml)
  • 4 eggs
  • 1 heaped tablespoon of sugar
  • if necessary, 1-2 tablespoons of cornstarch if a stiffer pudding is desired
  • 1 teaspoon ground vanilla
  • 1 Msp. Cinnamon
  • if necessary, 1 tbsp grated coconut

preparation

  1. Wash off an orange hot, dry and rub off the peel.
  2. Squeeze all oranges.
  3. Beat 4 eggs in a mixing bowl and stir only until egg whites and egg yolks are mixed. Not stir frothy!
  4. Add sugar and stir.
  5. Add orange juice, pulp and orange peel and stir, do not stir until frothy! Possibly. use the blender (who takes cornstarch, smooth it with a little orange juice and add it).
  6. Fill mass in glass form (s) and place in the pressure cooker. Either: Pour on the bottom of the pot, then carefully pour at least enough water so that the water level is as high as the pudding mass in the glass. Or (this is safer): Put the required amount of water (according to the instructions for use of the SKT) on the bottom of the pot, place the perforated insert on it and place the refractory glass bowl in the perforated insert, lid of the pudding mold and close the SKT.
  7. Cook for 10 minutes at level 1. If possible, do not move the SKT, turn back the heat soon enough. Wait for the pressure to dissipate by itself. In no case evaporate!
  8. I like doing that last night, then the pot can cool overnight and will not open until the next morning.
  9. Serve well chilled. You can cut the custard from the cams and serve with orange slices. But I like a smooth cream better.

Preparation in the oven:

The pudding can also be prepared within 50 minutes in a water bath in the oven at about 180 degrees. To do this, place the refractory pudding dish in the dripping pan filled with water.

Note:

If one forgets the lid of the pudding mold during the preparation in the pressure cooker, one receives a sweet Eierstichsuppe (with a lot of egg and little soup). That also happened to me before. To save the dessert I have the "eggsticks soup? Poured through a sieve and the egg mass with the blender, 1 teaspoon guar gum 1 teaspoon sugar mixed and stirred and then the mass is cold. Nobody knew anything about the mishap, nobody noticed, it was good for everyone.
