Gaisburger march - a really good stew

The Gaisburger March is a classic of Swabian cuisine.
The quantities may vary.
Ingredients for 4 persons:
- 1 pound of beef (ox breast or boiled beef or other soup meat)
- 1/2 pound of cooked and peeled potatoes
- 1/2 pound spaetzle
- 1 pound of colorful vegetables (carrots / celery / leek / cauliflower / beans) you can vary here to your own taste!
- at least 1 handful of parsley / chives
- about 2 L good beef broth
preparation
- Cut the meat into small cubes and fry them all over and boil them in about 3 liters of water, then simmer for about 1.5 hours until they are firm.
- Approximately 1/2 hour before we add the also diced vegetables, the spaetzle and the potatoes.
- Add the chopped herbs before serving.
PS: The Gaisburger March was created on the basis of a historical event. At the time, relatives had to feed their imprisoned family members themselves. But the food was only allowed to go to jail in a single vessel. Resourceful Swabian housewives made a virtue out of necessity and put meat, potatoes, spaetzle and vegetables in a pot.
