Galettes Bretonnes - the real hearty crepes

I lived in Brittany for some time and got to know this wonderful food. Galettes are the hearty answer to crêpes, and come from this French region.

ingredients

  • 250 g buckwheat flour
  • salt
  • 2 eggs
  • 50 cl of cold water
  • 40 g of melted butter

preparation

  1. Mix the flour, salt, eggs and water well with the melted butter. Then leave the dough covered for 2 hours. Finished.
  2. Then quite usual thin? Crepes? baking it is best done in a crepe pan.
  3. The classic? Galette bretonne? is filled with salted butter, a fried egg, boiled ham and grated cheese (Gruyère, Emmentaler ...).
  4. We always bought the Galettes at the bakery and then filled in the evening only fast, that was more convenient, so I would prepare the Galettes, if you want to have a cozy evening, even in the afternoon.
  5. Then place a galette in the pan, sprinkle on one half of the cheese and when it starts to run out, fill the rest. Again some cheese and fold up. Then turn again, so that the? Upper? Cheese also melts. Finished!
  6. There are whole restaurants in Brittany where you mainly sell galettes and there are countless filling versions. But they are always stuffed heartily - sweet fillings come only in crêpes!
  7. The imagination knows no bounds, who wants to have it authentically, but should refrain from new-fangled bells and whistles.
  8. Personally, I love it with onions, boiled ham, mushrooms, egg, tomatoes & cheese ... Leckeeer!
  9. It is also great to have a farmer's breakfast or crème fraiche with bacon and onions, and so on.
