The Traditional Uygur Rice Dish? Gan Fan? In combination with beef and vegetables, it is extremely popular among Uyghurs and Kyrgyzs and offers an incredible, unmistakable taste. The recipe for? Gan Fan? brought Uyghurs to Kyrgyzstan and then added other vegetables - radish and Chinese cabbage. Despite the variety of ingredients, the rice dish is? Gan Fan? not too expensive. The beef in the dish can easily be replaced with sheep meat. The use of soy sauce in Gan Fan is very important because if you let the meat stew long enough in the sauce, it will be much softer. In addition, the dish does not need salt, because the soy sauce gives the taste the salty note.

ingredients

  • 2 cooking bags of rice
  • 400 g of beef
  • 2 pieces of onions
  • 2 pcs. Paprika (large)
  • 2 pcs. Carrots
  • 6 toes of garlic
  • 250 g radish
  • 5-6 sticks of celery
  • 100 ml soy sauce
  • Water (to dilute the soy sauce)
  • Pepper, paprika powder to taste
  • 1/3 tsp turmeric
  • 3-4 tablespoons oil (for frying)
  • Pomegranate seeds (You can choose to decorate and serve)

preparation

  1. Cut the beef into medium-sized, square pieces. I used lean beef roast for stewing.
  2. Then fry the pieces of meat with oil in the pan. Then add the soy sauce and reduce the heat.
  3. Meanwhile, cut onions into thin, half rings. Six cloves of garlic are best crushed with a press. Add the onions and cloves of garlic to the meat and continue to cook covered on low heat.
  4. Again and again, when the volume of the sauce decreases, you can add water to the sauce in between. So the meat always remains moist when stewing, and the sauce is not too salty! Do not forget to stir more often!
  5. Wash the peppers, halve, core and cut into thin strips. Wash, peel and halve the carrots just like the peppers cut into thin strips. Wash the celery, peel and free from the solid fibers. In retrospect, cut the celery sticks into pieces. The sliced ​​vegetables should be added one after the other to the pan and steamed. First the carrot, then the pepper strips and finally the celery pieces are added. Steam everything together and season with pepper, paprika and turmeric.
  6. Finally, peel the radish with the vegetable peeler and grate it roughly, then add it to the food.
  7. Let it stew for about 1.5 hours with the lid on with frequent stirring and adding a little water.
  8. Serve the well-seasoned beef and vegetables with cooked rice. If you like pomegranate seeds, you can also distribute them and serve them!
