Grandma's cheesecake

Ingredients for grandma's cheesecake

  • 250 g flour
  • 1/2 teaspoon baking powder
  • 6 eggs (M)
  • 125 g of butter
  • 400 g of sugar
  • 1 pinch of salt
  • 1 kg cottage cheese
  • 1 1/2 pck. Pudding powder for cooking
  • 1 pck of grated lemon peel
  • 1 tbsp icing sugar
  • Mint to decorate (who wants)

preparation

  1. Mix the flour, baking powder, 100 g sugar, salt, 1 egg and butter in small pieces, with the dough hooks of the mixer to a smooth dough. Covered shortcrust pastry for about 30 minutes.
  2. Roll out the shortcrust pastry on a lightly floured work surface, slightly larger in diameter than the springform (26 cm). Grease the mold, dust with flour and lay out with the dough. Pull the dough up a bit and press on. Pierce the floor with a fork several times and briefly cool again.
  3. Separate 5 eggs. Beat the egg yolk, cottage cheese, custard powder, remaining sugar and lemon zest with the whisk from the blender. Beat the egg whites until stiff and place under the quark mixture.
  4. Fill quark mixture into the mold, smooth it out and bake in the preheated oven (electric cooker 175 degrees, circulating air 160 degrees) for approx. 75 minutes. After half of the baking time may cover the cake!
  5. Allow to cool after baking. Dust cheesecake with powdered sugar and decorate with mint.
  6. If you like, whipped cream can be enough.
