Grandma's honey gingerbread break with cream

My grandma baked the dough from the honey gingerbread in 4 parts on the plate. Cut out and decorate was too much for her. Baking and breaking, that's how it went, and it was great fun for us.
From the 4 parts a bowl was filled with breakage. On a piece came a cherry on the cake, which we licked off immediately!
ingredients
- 500 g of liquid honey
- 200 g wheat flour
- 200 rye flour
- 1 pck of baking soda
- 1 teaspoon cinnamon
- 1 pinch of cloves and cardamom each
- 1 pck of lemon peel rubbed
- 1 pck of orange peel rubbed
- 75 g almonds ground
preparation
- Mix the honey with the spices, grated almonds, lemon and orange peel.
- Sift the flour into a bowl, add baking soda and gradually add to the honey mixture. Mix well and knead well.
- Roll out the dough on the greased baking tray and divide into 4 pieces with a plastic or wooden handle.
- Bake for 12 - 15 minutes at 200 degrees. Check with the knitting needle: The honey gingerbread should not be too firm.
- After baking, allow to cool and break into small pieces.
