Greek walnut cake (Karythopitta)
I have been getting this cake since I was little (am now 33) from my parents for my birthday. It's the tastiest nut cake I know. A sweet Greek nut cake that tastes great and is easy to prepare.
ingredients
- 7 eggs
- 7 tablespoons of grated rusk
- 1 glass of sugar
- 1 glass (or more if you prefer) chopped walnuts
- 1 sachet of vanilla sugar (+ 1 for the syrup / glaze later)
- 1/2 lemon
- ground cinnamon
preparation
Separate egg yolk / egg whites.
Stir the egg yolks with the sugar, 1 pinch of cinnamon, a grated lemon zest and 1 sachet of vanilla sugar until creamy (preferably with a whisk if possible).
Beat the egg whites with a very small pinch of salt and a few drops of water with the blender until stiff. Then stir in the egg yolk with the whisk, add rusk, nuts and a little cinnamon and stir gently.
Pour the mixture into a lightly Magarine form (round pan) and bake at 175 ° C on a lower rack for 50-60 minutes. Allow the mold to cool and remove the cake.
Then make the glaze, the Greek syrup:
1 glass of sugar, 1 1/2 gals of water, 1 sachet of vanilla sugar, bring a few drops of lemon to a boil. Allow to cool slightly and distribute the syrup spoon-wise on the cake. (Optionally you can also use hazelnut glaze, but the syrup tastes better.)
