For the hare pepper we need a broken wild rabbit or a dissected breeding / masthead.

It takes the blood of the hare (at least 200 ml), which you should ask the slaughterer to obtain. Mix this blood with just as much vinegar (200 ml are usable).

preparation

  1. Fry 2 chopped onions hard (almost black).
  2. Separately roast the offal (heart and liver) and the front parts (runs, Rippenkram, Gescheide / stomach) just as hard.
  3. Add onions and slowly add the blood-vinegar emulsion. A shot of water can not hurt (100 ml). Salt and a lot of pepper, done.
  4. If it seems too watery, can be thickened with flour. You can refine it with leek or mushrooms, which fits.

In itself, this is a solo soup, but it should also taste with floury potatoes or rice.
