Making hazelnut cream as a spread or as chocolates - very easy.
You need hazelnut cream - surprise - hazelnuts. I buy unpeeled from the discounter - just pay attention to the expiration date, they are quickly rancid.

- 200 g of hazelnuts
- 200 g of chocolate
- 4 tablespoons créme fraîche

- The oven is preheated to 170 degrees - not higher - the hazelnuts are spread in a layer on baking paper on the baking sheet and roasted for a quarter of an hour.
- When they have cooled down slightly, it is easy to rub off the skin. Just pour the nuts into a dishcloth and rub. These roasted nuts can now be easily ground finely in the food processor. It also works with the mortar, but lasts much longer.
- The water bath melts chocolate. On 50 g of nuts, 50 g of chocolate. You can experiment with the varieties - I find delicious bittersweet. Add 50 g of 1 tbsp crème fraîche to the chocolate and mix with the ground hazelnuts.
This cream can be spread on fresh bread or mares - you can roll them with wet hands to balls, let cool - and then eat as a kind of truffle chocolates.
