Hefezopf with rumrosines and almonds

We had an appetite for Hefezopf and then I immediately remembered my mother's recipe for a Hefezopf with rumrosins and almonds. The braid was often baked for the weekend and we always liked to eat it. Today it tastes just as good as it did back then, and I'm sure it will taste you too. That's why I do not want to withhold the recipe and write it down for you to bake.

ingredients

  • 500 g wheat flour type 405
  • 200 ml of lukewarm milk
  • 90 g room-warm butter or margarine
  • 1/2 cube of fresh yeast
  • 40 g of sugar
  • 1 egg
  • 1 tsp neutral oil
  • 1 pinch of salt
  • 1 handful of rum raisins
  • 1 handful of almond sticks or
  • 1 almond flavor

preparation

Put the flour and sugar in a bowl and put a bowl in the middle. Here, the yeast is crumbled and gently stirred with half of the lukewarm milk. Cover the bowl with a cloth, place in a warm, draft-free place and let the dough rise for about 25 minutes.


Now come the other ingredients, so butter or margarine, egg, oil, salt, the remaining milk, the rum raisins and the almonds or the aroma, and the dough is with the kneading hooks of the hand mixer or the food processor well, but a solid nevertheless kneaded supple mass. This mixture must now rest covered and go for an hour in a warm place.

During this time, the dough has doubled and must now be kneaded very well on a lightly floured base with your hands again. The dough is divided into 3 portions, these are rolled into strands and then interwoven with each other to form the braid. This pigtail is placed on a baking sheet lined with baking paper and inserted into the cold oven on the middle rail. The oven is now set to 175 degrees convection and the braid should now bake for 45 minutes.

After cooling completely, the raisin pot tastes best freshly sliced, but also a day or two after baking, it is still delicious, just eaten without anything or covered with jam, cheese or the like to taste.
