Homemade potato pancakes

I put a tip here several years ago, that you can "roll" potato dumplings in the morning and "store" them in a damp towel in the fridge. Then came the question of my recipe for the dumplings.
It's a recipe of what I got from my cousin in Chemnitz. And before the turn. Since then it has become an integral part of my diet. Unfortunately, I am now alone, and therefore do not cook anymore. I can not deliver photos, but the recipe.

For 4 people
- about 1 kg of potatoes, preferably floury-boiled, but it also succeeds with hard-boiling
- 2 eggs
- salt and pepper
- Flour
preparation
- Boil potatoes and squeeze through a potato squeezer. I always cooked them in the evening and had them refrigerated overnight in the fridge.
- Put the next morning in a bowl and squeeze it together to form a solid mass. Superficially divide by 4.
- Take out one quarter and spread out on the remaining 3/4. Fill the resulting "hole" with flour.
- Then add 2 eggs and season with salt and pepper. Knead the whole thing, and make dumplings.
Another tip! Before shaping the dumplings, put on a small pot of water and make a test dumpling. Depending on the type of potato it could be that you may have to add some flour.
