How to flatten a herring
Here are some tips on how to make a herring flatten - and thus, for example. can fill easily.
- First, the board is coated with vinegar - then it does not take on the fishy smell. I take a wooden board because I can work on it best. The slippery fish slips on glass too easily.
- I lay the gutted fish - that's what the nice fishmonger does - with his belly down on the board.
- Then I beat my fist a few times with my fist on the back, until the herring is big and flat as a floe.
- I turn the herring and pull the middle bones off with a jerk in the direction of the tail. Some small bones can be plucked off with the tweezers. Dab with paper.
- Now the herring can be filled, e.g. with a piece of gherkin and bacon.
You roll up the herring from the tail and bread it like a schnitzel:
First in flour with a little salt and pepper, then in egg and finally in breadcrumbs.
The opening can be put together with a toothpick, it works also without, if one rivets on the seam.
With potato salad and lemon wedges, that tastes great!
