Time

Preparation time: 10 min.
Cooking or baking time: 5 min.
Total preparation time: 15 min.

Cima di rapa or stalk cabbage is a type of Italian broccoli and tastes very delicious, unusually spicy, a little bit bitter. Most of the bitter substances, sitting in the dark green leaves, which I remove before preparing.

You can get Cima di Rapa not only in Italian shops, but often in Turkish too. I cook it today as a side dish for lamb fillets and small pink potatoes from France.

Ingredients:

For 4 people:

  • 1 kg Cima di Rapa
  • 2 cloves of garlic
  • 1 onion
  • Salt, sugar, lemon juice
  • a little butter and 2 tablespoons of olive oil

preparation

  1. First I wash the vegetables and brush it, as I said, I remove the dark green leaves. The stems I cut into pieces, I peck the leaves a little smaller, the little roses or small yellow flowers, I cut through even once.
  2. In a mixture of oil and butter I fry the minced garlic and the onion, then Cima di Rapa is added. The steaming is fast - in 5 minutes the vegetables are cooked.
  3. Then I season with salt, sugar and lemon juice.
  4. It tastes very good too short roasted lamb fillet, but also as a cold appetizer, with Parma ham or grated Parmesan and Italian white bread.
