Cima di rapa or stalk cabbage is a type of Italian broccoli and tastes very delicious, unusually spicy, a little bit bitter. Most of the bitter substances, sitting in the dark green leaves, which I remove before preparing.
You can get Cima di Rapa not only in Italian shops, but often in Turkish too. I cook it today as a side dish for lamb fillets and small pink potatoes from France.
Ingredients:
For 4 people:
- 1 kg Cima di Rapa
- 2 cloves of garlic
- 1 onion
- Salt, sugar, lemon juice
- a little butter and 2 tablespoons of olive oil
preparation
- First I wash the vegetables and brush it, as I said, I remove the dark green leaves. The stems I cut into pieces, I peck the leaves a little smaller, the little roses or small yellow flowers, I cut through even once.
- In a mixture of oil and butter I fry the minced garlic and the onion, then Cima di Rapa is added. The steaming is fast - in 5 minutes the vegetables are cooked.
- Then I season with salt, sugar and lemon juice.
- It tastes very good too short roasted lamb fillet, but also as a cold appetizer, with Parma ham or grated Parmesan and Italian white bread.
