Jouvarlakia - Greek meatballs in a delicious soup

For the summer really wonderfully refreshing

1/2 kg hack
1/2 cup of rice
1 egg
1 small onion, finely diced
2 tablespoons of finely chopped parsley
oil
Salt pepper
for the soup: the juice of a lemon, an egg

Preparation:
Mix the minced meat, rice, onion, parsley and egg well and season, then make small balls. Heat the oil in a pot and put the balls into it. Add one liter of water and a little salt and bring to a boil. The whole then for about 15 min (depends on the size of the balls and the variety of rice) cook. Remove the pot from the fire and beat an egg in a bowl for the soup, mix the broth from the meatballs with a trowel and slowly add to the pot. Now put the lemon juice in the pot and let it simmer for 10 min. It is important that the broth no longer cooks, otherwise the egg falters.
