Juicy muffins made from quark dough

These muffins are very juicy by the quark in the dough. It is based on a recipe from the magazine Landlust and was slightly modified by me and the amounts of ingredients so converted that it just enough for a 12er Muffinform.


  • 80 g of butter
  • 130 g of sugar
  • 1 egg, size L
  • 1 pinch of salt
  • 165 g quark (I always take lean quark)
  • 200 g of flour
  • 1 pck of baking soda
  • 1 pck of vanilla sugar
  • 60 g raisins or cranberries


  1. Set oven to 170 ° C circulating air.
  2. Beat the butter, sugar, vanilla sugar and salt until fluffy.
  3. Stir in egg.
  4. Stir in cottage cheese.
  5. Mix flour with baking powder, sieve over the mixture and stir.
  6. Fold in the raisins or cranberries.
  7. Eat a 12-cup muffin dish or place paper cups on it and use an ice cream scoop to evenly distribute the dough into the pans.
  8. Bake at 170 ° C for 20 minutes.
  9. Gar test with wooden sticks.
