Juicy pineapple sour cream cake from the plate

A very delicious, juicy-fruity pineapple sour cream cake made from tin, which is baked easily and quite quickly and always arrives at a coffee break!

ingredients

  • 400 g of flour
  • 1 pck of baking soda
  • 200 g of sugar
  • 1 pck of vanilla sugar
  • 1 pinch of salt
  • 250 g butter

For the filling:

  • 2 eggs
  • 200 g of sugar
  • 1 pinch of salt
  • 100 g of sour cream
  • 40 g cornstarch
  • 2 small doses of pineapple in pieces (á 340 g)

For the casting:

  • about 150 g powdered sugar
  • 4 to 5 tablespoons pineapple juice

preparation

  1. The oven is preheated to 175 ° C top / bottom heat.
  2. The pineapple pieces are left to drain well on a sieve.
  3. Mix the flour with baking powder, sugar, vanilla sugar and salt, cut the cold butter into small cubes, add to the flour mixture and process everything with a fork or with the dough hook of a hand mixer to a crumbly dough. Just under a third of it wrapped in foil put in the refrigerator.
  4. Place the remaining dough on a greased or lined baking sheet and press on as a base. Then place the tin in the preheated oven and prebake for 10 to 15 minutes.
  5. Meanwhile for the filling Beat the eggs in a bowl (not with the hand mixer), then add the sugar, salt and sour cream and continue to beat. Now add the cornstarch and mix carefully until everything is well mixed. Finally, fold in the well drained pineapple pieces.
  6. Remove the baking tray from the oven and allow to cool slightly.
  7. Then spread the fairly liquid filling on the cooled soil and evenly distribute the chilled crumbly dough out of the fridge as sprinkles.
  8. Put the cake back in the hot oven and bake for another 35 to 40 minutes until the topping is golden yellow. Then remove and let cool.
  9. For the molding The icing sugar is mixed with pineapple juice and poured over the cooled cake. But you can also simply dust the cake with powdered sugar after cooling.
