Juicy plum cake with butter crumble, suitable for plum seasoning: This delicious cake with crunchy crumbs is light and quickly prepared and you can enjoy it very well already warm with a little cream or a scoop of vanilla ice cream!

For a baking sheet 26 x 38 cm
- 500g flour
- 1 pck of baking soda
- 250 g of sugar
- 1 pck of vanilla sugar
- 1 pinch of salt
- 250 g soft butter
- 2 tablespoons oil
- about 1 kg of plums
- oatmeal
- some cinnamon and sugar
preparation
- The oven is preheated to 180 degrees top / bottom heat.
- The plums are washed, pitted and cut lengthwise into quarters.
- In a mixing bowl, the flour is mixed with the baking powder, sugar and vanilla sugar.
- Then add the oil and the butter in small pieces and knead everything with the kneading hook of the hand mixer or simply with a fork to a crumbly crumble dough.
- Approximately ? of the dough are now pressed as the bottom of the greased or lined with baking paper sheet as a bottom with a small edge. The bottom is lightly pricked with a fork to keep it smooth while baking, and lightly sprinkled with oatmeal so it does not moisten.
- Now spread the prepared plums next to each other and sprinkle with cinnamon sugar.
- Finally, the rest of the dough is sprinkled over the plums and the cake is baked on a bottom rail in a preheated oven for about 30-35 minutes.
Then you can the plum cake still warm or cooled and best enjoyed with some whipped cream or vanilla ice cream!
