Juicy pound cake with apples and marzipan

Juicy sponge cake with apples and marzipan: Here is a recipe for a wonderfully loose sponge cake, which tastes very fresh and juicy. The preparation is quite fast, it only takes about 35 minutes.

You can also bake this cake a few days before consumption, as it always tastes better with time!

ingredients

  • 4 eggs
  • 175 g of brown cane sugar
  • 1 pck of vanilla sugar
  • 1 pinch of salt
  • 100 ml of vegetable oil
  • 80 ml of milk
  • 250 g cake flour (Type 550)
  • 1 pck of baking soda
  • 50 g almonds (chopped or ground)
  • 4-5 sour apples (about 500 g)
  • 100 g marzipan raw material
  • 50 g of raisins or cranberries and a little rum

  1. The raisins / cranberries are best soaked overnight in rum (alternatively: apple juice).
  2. On the baking day, the oven is preheated to 200 degrees top / bottom heat.
  3. Eggs, cane sugar, vanilla sugar and salt are stirred very frothy, with further stirring, the oil is allowed to run in slowly, as well as the milk. The flour is mixed with the baking powder, sieved in portions over the dough and stirred well. Then stir in the almonds.
  4. The apples are washed, freed from the core (they do not have to be peeled!) And roughly grated. Then the marzipan paste is cut into small cubes or grated (this works best if you freeze the marzipan paste before).
  5. Mix the marzipan and soaked raisins / cranberries with the grated apple mixture and put the whole thing under the dough. This one gives in a greased, with crumbs spread or with baking paper laid out box shape, I have already baked it in a Gugelhupfform.
  6. Now comes the cake for 55 to 60 minutes in the preheated oven (make absolutely chopsticks!). It may have to be covered towards the end of the baking time so that it does not get too dark.
  7. After the baking time, it is first allowed to cool in the oven before it is removed from the mold. When it is completely cooled, you can either dust it with powdered sugar or cover it with couverture.
