Kadayif: Heavenly good dessert topping with angel hair

Kadayif, or depending on the country also Kadaifi / Kataifi or Kadaif is a sweet with thin hair-thin dough threads. Walnuts, honey, sugar syrup and butter are usually processed for the very sweet food, but also sheep cheese and Kaymak, a firm jelly cream, are used to conjure up good-tasting dishes.

I also tried it once today and made a crunchy topping for a creamy pudding out of it.

Ingredients (4 people)

  • 250 g of dough threads
  • 200 g butter
  • 100 g of walnuts
  • 200 ml of water
  • 200 g of sugar
  • Lemon (optional)

preparation

  1. Heat water and sugar and simmer on a low flame for about 35 minutes. If a thick syrup has formed, refrigerate. If you like, give a splash of lemon to the crowd.
  2. Remove dough threads from the pack and remove the amount you need (the dough threads are firm and very long).
  3. After removing the required amount, be sure to immediately cover the remaining dough with a damp cloth, as it dries very quickly.
  4. Heat the butter in a pan and lightly brown the walnuts (this time with fat!)
  5. Remove the nuts and put the pasta threads in the pan.
  6. Now it is best to pull the dough threads apart with 2 wooden spoons, turn them and fry in the hot butter for about 15 minutes.
  7. If the angel hair is lightly browned and crispy, add walnuts, swing through briefly and arrange on your favorite dessert (here: cream chocolate cream).
  8. Drizzle with the sugar syrup (if you want to save work, use honey or agave syrup).
  9. Sit back, enjoy and float on cloud 7 with a topping with angel hair!

Tip: The raw dough can be frozen in portions (see Figure 9). Finished dough threads should be processed immediately and tolerate no frost.
