Kasseler in sauerkraut and gwichste dumplings (flour dumplings)

A delicious recipe for a typical Bavarian meal. In Bavaria one likes to eat Kasseler with sauerkraut and the Gwichsten dumplings (flour dumplings). Gwichste, as we call it in Bavaria, is usually made with rye flour, but I like to use normal wheat flour, it tastes just as good.

They are easy to prepare and taste particularly good with sauerkraut and smoked meat, as they have little taste, but it has the smoked, is usually very salty. Some people also eat roast pork.


Ingredients dumplings

(about 5 medium dumplings)

  • about 400 g of flour
  • a bit of salt
  • 3/4 cup of lukewarm water

The flour is put into a bowl, then some salt is added and kneaded well together with the water, if the dough is still a bit sticky, just add flour to it. After kneading, the dumplings are made from it and boiled in boiling salted water for about 20 minutes.

For the Kasseler is needed:

  • Kassel
  • a big tin of sauerkraut or something more
  • 3 pcs bay leaves
  • some juniper berries
  • some caraway
  • 2 pcs bouillon cubes

preparation

  1. The sauerkraut is placed in a large pot, add the juniper berries, the bay leaves, bouillon cubes, caraway and in the end comes to about 1 liter of water, or something more.
  2. Then everything is stirred well with a spoon and the stove switched on at medium level, the Kasseler put in with pure in the pot, s.besten something to mix under the sauerkraut.
  3. Cover it and simmer for about 20 minutes. It should be seen that dumplings and cassolers can cope at about the same time. After serving on the plate is still some of the accrued liquid, otherwise the dumplings are too dry.
