Keep freshly cut bread fresh

Often you buy an already cut loaf at the bakery. I have found that the bread stays fresh much longer, if you do not at the edge pieces with the Knäppchen (or Knüzchen, Knust, Kush, edge, Knäusle, Knuse, Krutze, Kipf, or whatever that means in the different regions) starts, but consumes the bread out of the middle.

So, I take the biggest cuts from the middle, put the bread back together; next time take the next largest cuts and put the bread back together, etc.

Of course, I also keep the bread in a suitable bag or bread bag, bread box. In the end, only the two outer pieces (Knäppchen) are there.

So the bread has no opportunity to dry on the cut surface. I hope I have described that reasonably well.

(but please do not write now: "I always cut the bread myself.", because I could do that too ;-)
