Kohlrabi Lasagna (Low Carb)

In the case of gestational diabetes, in most cases it is sufficient to change the diet and to dispense with carbohydrates in order to control the blood sugar level. After birth, the blood sugar level usually normalizes relatively quickly. But eating little or no carbohydrates is not easy. Here is a great recipe that tastes the whole family and can be eaten by the expectant mum.

Dishes with little or no carbohydrates are not easy to find. Mostly pasta or potatoes and you should rather not eat. Of course you can get along well with vegetable soups of all kinds. But the whole family will have some soup at some point. A kohlrabi lasagna is a welcome change.

Ingredients for four persons:

  • 4 kohlrabi
  • 2 shallots
  • 500 g minced meat, mixed or beef
  • 1 can of lumpy tomatoes
  • 1 tablespoon tomato paste
  • 200 g herb cream cheese
  • 1 tbsp thyme (leaves removed)
  • 1 teaspoon rosemary (chopped)
  • 1 teaspoon oregano
  • salt and pepper
  • 200 g of grated cheese

Peel the kohlrabi, cut into slices of about 1 cm and boil in salted water for ten minutes. Heat the olive oil in a saucepan and fry the minced meat. Add the onion and sauté. Then add rosemary, thyme, oregano and tomato paste, sauté briefly. Add the tomatoes and the herb cream cheese. Let the sauce boil briefly. If it is too thick, you can add some vegetable stock. Taste the sauce with salt and pepper.

First spread a layer of kohlrabi slices on the bottom of a baking dish and then alternately fill a layer of sauce and a layer of kohlrabi slices in the mold. Sprinkle with the grated cheese at the top and bake at 180 ° (convection) for 30 minutes.
