Leftovers casserole

From food scraps that have frozen, casseroles "tinker".
Since we are only two people, it is not enough to have left over from lunch, vegetables, meat, rice or pasta. Since I can not bring it to my heart to throw away those "leftovers", I freeze them.
This morning again my TK tray "tidied up".
I have the following, i.a. found:
- Each a small bag of mushrooms and herbs
- a rest spaetzle and leek
- Then I found two turkey schnitzel
Since my husband and I like casseroles, I thought, you can make a casserole.
In the house I always have cream and creme fraiche.
preparation
- So I cut the schnitzel into strips and sautéed in a little oil. The meat is taken out of the pan.
- In the remaining oil, the mushrooms, the leek and 1 onion (sliced) steamed.
- Then cream and creme fraiche added. Bring to a boil and season with pepper, salt and nutmeg.
- Tied with a little white roux. Then I added some gorgonzola.
- Then mix in the meat and spaetzle.
- Some chives and parsley finely chopped, unt given.
- Cook in a casserole dish and bake at 160 ° C for about 30 minutes.
For us 2 it was enough and there was nothing left.
As I said, it should be just a suggestion that you do not always throw "leftovers" in the trash, but can conjure up a delicious meal with a few ingredients!
