Lemon syrup - Lemon peel syrup
To make lemon syrup, peel the skins of 8 unspiked lemons very finely with the peeler.
Boil 2 liters of water - let it cool again. Add 2 kg of sugar, 35 g of citric acid (pharmacy) and the lemon peel and chill for a week.
Stir again and again to dissolve the sugar. After a week, boil, strain and bottle.
Due to the high sugar content of the syrup is preserved as jam.
The syrup tastes excellent with mineral water or hot tea.
