Light salad cream - almond mayonnaise - for the single kitchen

Real mayonnaise is mostly oil. The second important ingredient is egg. Mayonnaise is often stretched with dairy products such as yogurt, quark or sour cream. If you do not want to eat eggs or dairy products and do not like so much oil, you can try this recipe for an almond mayonnaise (light salad cream).

My family does not need vegan food, but when I'm alone, I enjoy making delicious almond salad with almond mayo just for me.


Ingredients for a single serving:

  • 1 tbsp ground almonds
  • ¼ tsp guar gum (binding agent for cold food, available at the health food store)
  • 2 tablespoons (2x 15ml) of water
  • 1 tsp (= 5ml) sunflower oil
  • 1 tbsp fresh chives
  • Mustard, tomato paste, herbs (fresh or dried), salt, Tabasco, lemon juice to taste

preparation

  1. Mix ground almonds with guar gum in a beaker.
  2. Add 1 tbsp. Of water.
  3. Mix well with a whisk (turn the electric mixer with only 1 whisk attachment, or 1 whisk attachment between both palms quickly).
  4. Add oil drop by drop (a syringe helps) and keep stirring for a long time.
  5. Add 1 tbsp of water again, this time drop by drop.
  6. Season with mustard, tomato paste, chives, herbs (fresh or dried), salt, Tabasco, a dash of lemon juice.

This salad cream is suitable for 1 serving of pasta salad or as an herb cream to potatoes. But you can also use the cream as a basis for spreads. Take a little less water for that.

Dosing aids for small quantities:

As dosing aids are a syringe and measuring spoon for medicines or straight measuring spoons, on which one can read well 1/4 quantity.

Who does not want to stay single:

If you want to eat more or do not want to stay alone while eating, you can easily multiply the ingredients. For the base mix 3 parts almonds, 3 parts water, 1 part oil. The amount of guar gum is based on the total amount: for each 100 ml of cream add about 1 coated TL guar gum with the dry ingredients in the mass or seven. Dilute the cream so mixed with up to 3 further parts of water to the desired consistency. Adjust spices and herbs accordingly.


Instead of ground almonds you can of course also take other nuts or seeds. e.g. Cashews, peanuts or sunflower seeds. You can also take musts instead of ground almonds or kernels: almond, sesame (Tahin) or peanut.

For larger quantities (larger than the single portion), a hand blender and a narrow, tall blender are ideal. Then you can even chopped almonds or nuts, which are only crushed by the hand blender.
