Linzer cake for vegans

If possible, I like to easily adjust to the eating habits of my guests. My Linzerorten recipe is quickly changed for vegans.

Ingredients Linzer cake for vegans

  • 250 g flour
  • 1 teaspoon of baking powder (does not have to be, but makes the cake softer)
  • 250 g of butter or margarine
  • 250 g of sugar
  • 1 packet of vanilla sugar
  • 250 g of ground almonds or hazelnuts, or each half of both
  • 1 tbsp cinnamon
  • 1 pinch of cloves
  • 1 tbsp cocoa
  • 1 pinch of salt
  • 2 - 3 tablespoons of soy or rice milk
  • 2 tablespoons of kirsch
  • 4 - 5 tablespoons jam (with us you take plum or plum jam)

For soya or rice milk can be used.

preparation

Flour, baking powder, sugar, vanilla sugar, salt, the gem. Chop almonds (or hazelnuts), butter and spices on the pastry board or other base with the knife until the butter is finely distributed.


Now you make a depression in the middle, pour milk and kirsch into it and do everything well together.

Leave the dough to rest for half an hour, then wave half of it to the bottom of the cake (16 cm in diameter), place the fat-coated cake sheet on it and spread 4 - 5 tablespoons of jam on top.

The second half of the dough is made to be half a centimeter thick and cut into narrow strips, which are arranged in a lattice pattern on the jam-topped cake base.


Who likes to sweeten the cake with soy or rice milk

I bake it for about 40 minutes at about 175 degrees.


Since I only have one vegan friend, it does not necessarily have to be a whole Linc cake for them, so I take the amount from the 1 1/2 recipe.


Process the dry ingredients with the butter or margarine and the kirsch and then divide this mass 2: 1.

In the smaller mass I give now half of the specified amount of rice or soy milk and in the larger quantity

1 egg

1 tbsp milk if needed

Let them both rest separately from each other and first make the larger cake as required, coat them with a mixture of 1 egg yolk and 1 tablespoon of milk and then put them in the oven.

In the meantime, I design the smaller cake and brush it with soy or rice milk if necessary.

Of course, I use a small baking pan for this cake.

Also, the baking time is reduced by about 10 minutes
