Liver dumplings simply homemade
A few weeks ago, almost every beer garden celebrated the Oktoberfest - even in NRW. One specialty that you can easily cook at home is liver dumplings.
You do not need many ingredients - and the preparation is not difficult even for beginners.
Ingredients for 4-6 people
- 12 old rolls, i. at least from the previous day
- 1/2 l of milk
- 3 eggs
- 350 g pork liver
- 1 onion
- 1 tbsp marjoram, dried
- salt and pepper
That is how it goes
- The rolls are cut into very thin slices. This is very easy with rock-hard rolls, if you put them in the microwave for 1 minute, then you can cut them well. Or you plan the liver dumplings two days before and put the fresh bread in a plastic bag. Even then you can cut them very well.
- The bread rolls are now in a bowl. The milk is heated and poured over the rolls.
- When the milk has been absorbed by the rolls, the 3 eggs are stirred in and then mixed vigorously.
- The liver and the onion are finely minced in the food processor or - chopped - with the stirring bar, the marjoram is added and salt and pepper to taste. Since the liver dumplings are cooked in broth, you do not need much salt.
- Finally, mix the liver / onion with the bun dough.
- Everything is kneaded well.
- Boil 2 liters of salt water and form once a small sample dumplings. Roll a ball between your palms with wet hands, then place it in the water.
- If the dough is just right, then it does not fall apart. If the dumpling does not hold together, add 2 tablespoons of dry breadcrumbs / breadcrumbs to the base. What could it be if he does not stop? For example, at the different size of the eggs.
- If the liver dumplings are of satisfactory consistency you can make them all.
- You will spend about 15 - 20 minutes in the broth. That means, after boiling up, you turn off the heat.
I like to eat these liver dumplings with raw sauerkraut or small gürkchen from the glass and a pretzel with coarse salt.
