Mairübchen and carrot salad with tomatoes and rocket

This fresh salad variant, Mairübchen and carrot salad with tomatoes and arugula, is low in calories, rich in fiber and vitamins and ideally complements the diet with the currently prevailing subtropical temperatures.

ingredients

(for 3-4 servings)

  • 2-3 Mairübchen
  • 3 carrots
  • 1 cucumber
  • 2 spring onions
  • a few mini tomatoes
  • an abundant handful of arugula (or other salad)
  • about 50 g sunflower seeds
  • salt and pepper
  • chilli flakes
  • 4 tablespoons olive oil
  • 2 tbsp balsamic vinegar
  • 2 tsp mustard
  • 2 teaspoons honey (liquid)
  • 200 g sour cream

preparation

  1. First lightly roast the sunflower seeds on a non-fat frying pan and allow to cool.
  2. Wash the Mairübchen and carrots, clean, peel and grate on a grater, wash the cucumber (not peel) and also grate. Mix everything in a large bowl and season with salt and pepper.
  3. Clean the spring onions, cut into thin rings and mix; quarter the mini tomatoes and add them as well.
  4. Clean the rocket, wash it, shake it dry and chop it roughly.
  5. Mix olive oil, vinegar, mustard and honey into a dressing, season with pepper, salt and chilli flakes and add to the salad with the rocket.
  6. Finally, spread the roasted sunflower seeds over it and arrange the salad with the sour cream.
