Make Lemon Curd yourself

Since I still have to process so many lemons, I've tried something new today: Lemon Curd, the delicious bitter English lemon jam:

ingredients

  • 7 organic lemons
  • Juice of an orange
  • Gelierzucker

preparation

  1. Peel the lemons very thinly with the peeler, chop them into thin slices with the kitchen spatula and add to a saucepan with 300 ml of water and simmer for 150 minutes at the lowest level.
  2. The peeled lemons squeeze, as well as the orange. Put the juice aside.
  3. Chop the squeezed fruit halves and the pressed pulp of the lemons roughly and cover with water, also simmer for 150 minutes at the lowest level.
  4. Then pass the mixture of pulp through a sieve, squeeze something.
  5. Mix the fruit juice, the water with the lemon strips, and the distilled pulp water in a measuring cup (give 1 liter of mass), mix with gelling sugar and cook for 4 minutes.
  6. Fill in jam jars - ready?
