Make liver soft and buttery: in the oven

I've been making liver a different way lately than I've been used to for decades: in the oven! She was buttery soft, tender and I can imagine, prepare them in this way in the future.

ingredients

  • Beef or pork liver to taste
  • sourish apples
  • onions
  • Bacon, bacon cubes or bacon
  • Fat (clarified butter)
  • Salt, pepper, marjoram, parsley
  • maybe a shot? red wine

preparation

  1. First, the apples are washed, the casing is cut out and sliced.
  2. They are now fried in clarified butter from both sides until they have turned a light brown color.
  3. Season with salt and pepper.
  4. In the hot frying fat onion rings are now browned (you can possibly dust them with flour, but this is not absolutely necessary). If you want to use ham cubes, you can also put them in the pan.
  5. The spiced liver is now placed in a lightly greased casserole dish.
  6. Then the pan contents (onions, possibly bacon cubes) are distributed thereon.
  7. Season generously with marjoram and cook for about 30-40 minutes in the oven to 200 degrees.
  8. After this time, add the apple slices and (if no bacon cubes were used) spread a few slices of ham on them and let them brown again for 10 minutes with the oven off.

Sprinkle the prepared oven liver with parsley and serve with mashed potatoes.
