Make meat broths

In the past I actually made (meat) bouillon from the supermarket / used. But, what do I know, what is in these man-made broths?

For that I made my broths myself. Since I live in Sweden and moose hunting in October, I also received bones with meat at that time. Even in other months, sometimes a Rehbein or bone with meat from a shot boar. This is actually my requirement for a super broth.

However, you have to pay attention to a lot. Everyone in Germany can make these broths too. You should use products that come from the meat counter, so z. B. an oxtail, some other meat products are no longer interesting. This refers to the offered meat cubes.


Here is my recipe to make a broth that is natural and barely polluted.

Ingredients and preparation

1 Oxtail, with several carrots, leek and salt, pepper, bay leaf and put it all in cold water. Let it simmer for about 2 hours. Then possibly scoop things that are on the broth.

I can use this broth without any problems for my stews. I can freeze it, then use it later, and then I have a broth, which gives my stews - through these broths - a special result that gives my tongue what I want.
