Making elderflower oil

The elderflower umbels can be collected from May to the end of July. This should be done best on dry days. It is not necessary to wash, it is enough to gently tap to remove insects.
From the umbels can be made many delicious things. This year I once tried the elderflower oil, it is ideal for puff pastry or fish dish and salad.
ingredients
- 10 elderflower umbels
- 250 ml grape seed oil or alternatively rapeseed olive oil
preparation
- The umbels stem, bake well and place in a large mason jar.
- Top up with oil so that all the umbels are well covered.
- Leave in a cool and dark place for about 2-3 weeks, then strain and fill in a disinfected bottle.
