Making elderflower syrup with lemon, lime, orange & vanilla

To make the elderberry syrup with lemon, lime, orange & vanilla you have to do the following:

Boil water and sugar in equal parts (glucose sugar) and add 1 liter of water per liter of citric acid (5 g). Allow the glucose to cool.

Per liter of water you need about 10 elderflower umbels. Do not wash elderberries just shake well and remove large stems. Put the flowers in a large pot.


For each liter of glucose each slice 1 untreated lemon, lime and orange (if orange is not untreated, peel the peel with a peeler) and slice onto the elderflower. Pour sugar over it, add a sliced ​​vanilla bar to it.

Cover and allow to cool and darken for 3-4 days and stir occasionally. Then seven, seven and bottling. I first had the citrus fruits and vanilla pod drain in a coarse sieve. The rest in a sieve with a Zewa sieved in 2 x. Finally, sift the broth from the coarse citrus fruits in the same way twice. Then bottled.

Tastes great in the summer in the mixing ratio 1: 20 (1 L of water + 50 ml of syrup) with cold mineral water. Or of course as Hugo.

I had 3.5 L of Läuterzucker with 35 elderflowers and 3 lemons, limes and oranges + 3 vanilla pods set and could fill a little more than 5 L elderflower syrup.
